Red Riding Hood included in 'Bedtime tales', illustrated by Mae Gerhard in vivid colours using a style that reminds me of Richard Scary's in that they are tumbling with busy action. Unfortunately apart from few other books that is all I can find of Mae. Published in 1973 by Dean & Son Ltd.
